I received a set of Russian piping tips as a present recently. I started noticing the pretty outcomes of cakes using them. Buttercream flowers are my favorite cake decoration, but I always make flower frostings from scratch using various petal tips. Here is the tutorial

Since Mother’s day is coming next week, I called my mom to check on how she’s doing and greet her as well. I am very grateful for being raised by a loving mom like her though her hair is turning gray, she never complains about life and remains the happy person that she is. I asked her what present she likes for mother’s day and told me that she had been missing to display beautiful flowers in front of the house for a very long time. I decided to order the most beautiful bouquet of flowers and ship it to her home on mother’s day. But deep inside my heart, I want to make some beautiful flower cupcakes that she would surely love. A simple way of saying thank you for all her sacrifices.

WHAT ARE RUSSIAN PIPING TIPS?

Russian piping tips differ from regular piping nozzles. These are jumbo tips that will help you to build many kind of buttercream flowers in uniform and in a short period of time. They have a variety of tips that create roses, tulips, daisies, swirls, abstract shapes, large sets of petals, and a lot more. Because of its large tips, you can easily layer different colors of buttercream inside the piping bag to create multi-colored flowers and shapes.

WHAT’S THE BEST BUTTERCREAM FOR RUSSIAN PIPING TIPS?

In this post, I used an Italian meringue buttercream, and the results were lovely! However, it was a bit challenging compared when using American buttercream. To easily create a flower, you need to pipe just above the surface. Gently squeeze and the buttercream will come down to make contact with the cake. You can use a standard American buttercream with more cream or milk mixed to get a nice pipable consistency. Making a flower frosting would take some practice but it’s all worthwhile.

Make a Frosting That Looks Beautiful

First, we need to put buttercream inside the piping bags. Make sure it is stiff and can hold its shape. If your buttercream is too soft, the piped design will not come out properly. The result will end into a dot of a puddled mess and we don’t want that.

To give this buttercream flowers a fantastic look, I like to have 2 tones or even a marble style when I pipe the frosting using the Russian flower tips.
Start by choosing your favorite piping tip available and place it in a piping bag with the tip snipped off. Open the bag and put it in an empty glass to hold the piping bag. Divide your buttercream into batches and mix with your favorite food coloring, to me gel or paste color will be fine.

2 tones color fill up: Use a small spatula or knife to fill a layer of buttercream on all sides of the piping bag then fill full other color buttercream in the center. One tip is that make sure you can see the piping tips point after filling the first layer, very important to make 2 separate color shade on your flowers.

Marble styling fill up: The first and easiest way to create a two-tone color is marbling the buttercream. Take two colors of the buttercream and give it a very light mix. Do not mix the colors all the way through. Place it in your bag then pipe away. In this method, you will get random variations of colors shades.

Pipe the flowers, If you’re using a soft buttercream, make sure to pipe just above the surface, with my experience I think for the first time you try these, American buttercream or icing will be the perfect idea to start, as they are not as flexible as Italian style, but it helps you to cut-off the buttercream easier at the end of squeezing. Squeeze and the buttercream will come down to touch the cake, then continue squeezing while you pull up to build the flower. Finish by pulling up without squeezing. Finally make some leaves with a piping tip #352 form Ateco brand (or any) to decorate and give your cupcake a colorful finish look.

Should we go for a long pipe or short pipe? For me, I find that some tips would make a lovelier flower when they are piped short while some would be nicer when piped tall.

I also find that those tips with swirls or swirly tips as I call them create a look of tulips when piped taller or longer. While piping tips with dots on the center that looks like stars appear better when they are piped shorter in which you can see the details inside the flowers, which reminds me of blossoms, that’s why I call them blossom tips. It is not advisable to pipe them longer as the details get lost.

Pinterest is one of my favorites for searching for new ideas for something news, especially for cake decorations, but it takes hours and hours to follow how to create the cake I want. I often do, but now it’s never impossible because you can make cakes like that too! No need to follow countless online video tutorials learning the intricacies of making buttercream flowers using traditional piping tips, and now I believe everyone can do something similar but still look gorgeous. Russian piping tips will help you top your next cake or cupcake with remarkably beautiful buttercream flowers with less effort. This is one of the cake decorating secrets everyone needs to know about.

Ingredients

For Italian Buttercream

    Group A

    • 8 egg whites room temperature
    • 1/2 cup castor sugar

    Group B

    • 1/4 cup water
    • 1 cup castor sugar
    • 3 cup butter unsalted is the best, room temperature

    Cakes, Cupcakes

    • 7 vanilla cupcakes
    • 3 7-inch chocolate round cake

    Instructions

    For Italian Buttercream

    • Beat (whisk) the egg whites in high speed for around 1 minute till it get bubbles
    • Add half sugar from group A then keep mixing on high speed for another 1 minute
    • Then add remaining sugar and keep beating on high speed till the egg whites getting sharp and peak point. Then reduce and turn off machine, and leave it
    • Bring the pot of group B then heat till it reach 235 F (117 C), very carefully at this step.
    • Then turn back the mixing machine on high speed, slowly drizzle the hot sugar into the mixer immediately.
    • Whip until the mixture becomes cool, whiter and soft peak
    • Change to paddle attachment then unsalted butter to running on slow speed, one by one.
